Made these tasty little sandwiches for lunch the other day… they are super easy and delicious!
Slice up some avocado and tomato. I used a vegetable peeler to thinly slice the cucumber.
Spread mustard and mayo (vegan) on one toasted side of the bread, and any flavor hummus on the other. Top with sprouts.
Layer the cucumber and avocado on the other side.
Top with tomato slices and enjoy!
There are SO MANY different combinations of veggie sandwiches and wraps you can make. It takes a little preparation to cut up the veggies, but if you slow down for 5 minutes, you can make a delicious and healthy lunch. :) What are your favorite veggie combinations for sandwiches?
